In September of last year, Fork in the Road launched its Fire Roasted Fuji Apple-Chicken Sausage. “The sausage contains real chunks of apple,” says Katherine Ferguson with Fork in the Road. There is a blend of two apples in this product: Fuji and Granny Smith. “We liked how the combination of the sweeter, softer bite of the Fuji apple blended with the tarter, firmer bite of Granny Smith,” mentioned Ferguson. There is more Fuji than Granny Smith in the formula and therefore, Fuji became the leading name. The Fuji apple variety is being fire roasted to add more complexity to the flavor.

500 pounds per month
By weight, apples make up 10 percent of the sausage formula. Currently, Fork in the Road sells about 5,000 pounds of sausages each month, equating to 500 pounds of apples in an average month. Apples are sourced from McCain Foods.

Non-GMO
Fire Roasted Fuji Apple Chicken Sausages were launched at Whole Foods Market last fall. “Consumer feedback has been very positive,” said Ferguson. “It has been one of the top sellers of our Non-GMO Project Verified gourmet sausage line. It has also received a lot of positive buzz on social media.”
