Natural colors are attracting more and more attentions in food application, especially for natural blue, because there are not as many natural options as red and yellow for blue color.

Fenchem will launch FenColor natural blue and red colors derived from .spirulina and black carrot respectively. Spirulina blue (phycocyanin powder) is a natural blue color extracted from spirulina. Phycocyanin is a pigment-protein complex from the light-harvesting phycobiliprotein family, along with allophycocyanin and phycoerythrin. It is water soluble pigment, providing transparent solution with bright and attractive blue shade. It can provide natural blue for blending other natural colors, like blending with yellow to give bright green or with red for purple shades. The color was just approved by FDA to be applied in expended food and beverage applications this year.

And another newly launched red color, black carrot color, is extracted from the root of black carrot, containing anthocyanin compounds (primarily cyanidin glycosides) which, after extraction, exhibit desirable red shades. It is stable in acidic conditions (red to purple red) with good light and heat resistant properties. The product is suitable to be applied in beverages, ice-cream, confectionaries, jam, jelly, integrated alcoholic beverages and etc.
