With more than 7.3 million Americans now claiming to be vegetarians and vegans, a new group of meat conscious consumers is also now emerging. These are people who still eat meat but are taking measured steps to cut back on their meat consumption in an effort to improve weight and health, save money, practice sustainability, reduce their carbon footprint and to experiment with global cuisine, which is often more vegetarian-based.

Comax Flavors has gotten ahead of this growing trend by developing a wide variety of flavor options for the meatless consumer.

Consumer interest in cutting back on meat is listed among many lists of the top trend predictions for 2013. There is even a new term "flexitarian," which has been coined to describe someone who eats mostly plant-based foods, but occasionally eats meat, poultry and fish. Whether it's restaurants or school cafeterias that offer the popular "Meatless Mondays" or the average family trying to be a little healthier, going meatless more often is a trend that is gaining traction.
