The Food Processing Center at the University of Nebraska-Lincoln (UNL) said that experienced managers will soon retire en masse and companies will be hard pressed to replace their expertise.


It added regulations such as the Food Safety Modernization Act are accelerating change, and social media is increasing the public relations risk factors, highlighted in recent reports on ‘pink slime’.

The center has developed an online course over three modules aimed at food processing workers, supervisors and managers, quality control and assurance personnel to establish the next generation of food processing managers.

The UNL Food Processing Management Certificate covers food safety, quality control/assurance, employee safety, food processing operations, product development and growth strategies.
